If you want untraditional but tasty pancakes, I'd suggest the whole wheat recipe from Nourishing Traditions.
Soak overnight at room temperature in a covered glass or ceramic bowl (not metal -- this is acidic):
2 cu whole wheat flour
2 cu buttermilk
Before cooking, add:
2 lightly beaten eggs
1/2 tsp salt
1 tsp baking soda
2 tbsp melted butter
water, as needed
